Mint Julep Chunky Applesauce
A mint julep is the traditional Kentucky Derby drink. The aroma of fresh mint in this hearty applesauce side dish recipe replaces the standard lamb condiment mint jelly, with a fresh fruit alternative.
- 3 lbs. Red Delicious apples, peeled, cored, diced
- 3/4 cup bourbon
- 1 1/2 cups apple juice
- 2 tablespoon fresh lemon juice
- 3/4 cup fresh mint, coarsely chopped
Place apples, bourbon, juices, and mint in a medium saucepan. Cook over medium heat, stirring occasionally, until apples are very tender about 45 minutes. Remove from heat.
Drain apples and reserve 1/4 cup liquid. Remove 1 cup drained apples and set aside. Place remaining apples in a food processor and process until smooth. Transfer to a bowl and stir in reserved liquid and apples until combined. Cool to room temperature.
Place in a bowl and serve cool as an accompaniment to lamb chops. Store in an airtight container in the refrigerator.
