Kentucky Derby Pie
My friend Ruth Shure brought this gooey pie to a Kentucky Derby Party thrown by my high school buddy Justine and her southern hubby David. After devouring 3 pieces, I cornered her and got the secret dessert recipe! More like a giant, chewy cookie in a piecrust, this dessert recipe is best served warm. Thanks Ruth!
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 3/4 cup flour
- 2 eggs, beaten
- 2 tablespoons Maker’s Mark Bourbon
- 1/2 cup unsalted butter, melted and cooled
- 3/4 cup walnuts
- 3/4 cup chocolate chips
- 1 (9-inch) unbaked pie shell
Preheat oven to 350F (175C). Sift together sugars and flour in a medium bowl. Beat in eggs and bourbon. Add cooled butter, and until combined. Stir in walnuts and chocolate chips. Pour batter into pie shell.
Bake 30 minutes until knife inserted in center comes out clean. Cool completely. Cut into wedges and serve. Store in an airtight container at room temperature.
