Ponzu Sauce for Sushi
Here’s a very elementary lesson in Japanese. I humbly request the pardon of my neighborhood sushi chef for this adaptation of their beautiful language. “Pon” loosely means citrus and “zu” means vinegar. The “z” changes to an “s” when the consonant starts a word, hence “su-shi” means “vinegar-rice”. You may never dip into soy sauce again after tasting this zesty alternative perfect for sushi appetizers.
- 1 cup soy sauce
- 2/3 cup rice wine vinegar
- 1/2 cup sake
- 3 tablespoons fresh lemon juice
- 2 tablespoons finely minced chives
Whisk together soy saucer, vinegar, sake, and lemon juice in a small bowl. Pour in dipping bowl and float a teaspoon of minced chives on top. Replenish dipping bowl with sauce and fresh chives as necessary.
Makes about 2 cups

Some grocery stores sell pre-made Ponzu Sauce. You’ll find it near the soy sauce in the Asian section of your grocery store.
